Having the ability to monitor both external collaboration being enabled and when allowed domains change, would be incredibly useful. This data is present in Graph API and should be relatively easy to add and parse. There is a setting as well regarding whether any users can invite external users to collaborate in the tenant.

I would just want the data to be visible in the dataprint so I can create an metric for it, or if there was some metrics created that would be amazing
